Ingredients
2 balls frozen pizza dough-thawed
Olive oil
1 container tomato puree
1 package sliced sopressata
1 package sliced pepperoni
1 container grated Parmesan
1 container fresh mozzarella-sliced into thin slices
Small container black olives-halved or sliced
1 deli salad
12 assorted cookies
1. Preheat a gas or charcoal grill. Once the grill is hot reduce the temperature to low.
2 Using your fingers or a rolling pin flatten the pizza dough into disks about 14 inches in diameter. Cover the dough with plastic wrap and let rest while you gather the remaining ingredients.
3. Brush one side of the dough with olive oil and place the oiled side down on the grill Close the lid on the grill and let cook for about 1 minute.
4. Turn the dough and spread with about ½ cup of the tomato puree. Arrange the sopressata, pepperoni, sliced mozzarella and olives over the dough and reclose the lid. Let the pizza “bake” for another 2-3 minutes or until the cheese is melted the bottom of the dough is a golden brown color.
5. Remove from the grill and rest for 1-2 minutes before slicing.
